In the middle of the year 2013, Albert Adrià open one of the six restaurant that he has at Barcelona's Poble Sec neighbourhood: the Pakta restaurant. In this place the best of two major food cultures, Peruvian and Japanese, merge.
Pakta presents the most advanced techniques based on this fusion cuisine but with touches by the author.
Pakta works with different types of set menus which always offers very good value for money, in addition to their cocktail list and the popular Japanese drink, sake.
Dishes: Salmon causa maki with miso mayonnaise, aburi sauce and wasabi. Pork neckfat nigiri with siu panka sauce. Grilled suckling pig gyoza with Japanese mushrooms. Lamb anticucho with grilled pineapple. Avocado tofu with urchin and salmon roe. Meagre ceviche with kumkuats tiger milk, roasted sweet potatoes, corn and onion. Spicy tuna tartare with quinoa, flying fish roe, soy, nori seaweed, sesame oil and cilantro.
