Run by the renowned chef Paco Ron, who has a Michelin star for Víavélez Puerto de Asturias tavern. The Viavélez restaurant opened in Madrid in 2008. It offers traditional recipes and its own innovative Basque cuisine.
Viavélez offers a cuisine, Asturian inspiration and Mediterranean base, true to the traditional flavors. They offer a variety of Basque dishes among which you can choose casseroles, rations and brochettes; also they have a selection of wines to accompany the food.
It has two different environments: the ground floor where we find the tavern, a select tapas bar with bar and four tables, ideal for pecking. And in the basement there is the elegant restaurant -of just nine tables-, dining room in which to enjoy the full power of Paco kitchen.
Dishes on the menu: fish soup with monkfish, clams and a bottom of scarlet prawns; hake confit with pea juice; honey jelly with banana ice cream; anchovy escalivada; sardines salad with parsley pesto and tomato bread spatter Cantabrian lobster; Norway lobster stew; cod tripe with rice onion; cod stew 'vizcaína' style.
