Manuel Dominguez Limeres opened the Combarro restaurant in 1973, in the district of Tetuan in Madrid, in order to offer the best Galician style food of the capital. Currently, Diego Dominguez directs the establishment and he has been appointed the president of the Association of Young Restaurateurs of Spain and therefore considered one of the greatest representatives of haute cuisine.
